Wrapped in golden puff pastry, these savory pockets are filled with a mildly spiced blend of ground meat, sweet potatoes, and peas. They’re portable, freezer-friendly, and dangerously snackable—perfect with a dipping sauce or on their own.
Ingredients

1-2 Packages Puff Pastry Sheets

1 pound Ground Pork or Chicken

1 cup Yellow Onion, diced

1 cup Sweet Potato, diced

½ cup Frozen Green Peas

1 tablespoon Madras Curry Powder

Salt

Egg Wash (3 Egg Yolks + 2 tablespoons water)

Defrost dough per package instructions. Preheat oven to 425F
Mix egg wash ingredients and set aside.
Brown meat in skillet on high for 5-7 minutes.
Add all vegetables, curry and chili. Lightly salt to taste. Sauté until done (~5 more minutes).
Remove, cool to room temp or overnight in fridge.
Unfold dough and cut each sheet into 9 squares. Spoon about 1-2 T meat into center of square. Fold one end diagonally and press with fork to crimp and seal. Set onto parchment paper and repeat until done.
Brush each triangle with egg wash right before baking.
Bake 18-22 minutes until puffed and golden.
Recipe Note
- Serve warm with fruit chutney! Uncooked pies can be frozen for 1-2 months. Bake from frozen for 20-24 minutes.
- Kid-approved recipe...they love to make them as much as eat them!
