This takeout favorite gets the homemade touch with juicy shrimp, lightly battered and flash-fried, then tossed with chili, garlic, and just the right salt-pepper finish. It’s crispy, spicy, and best served hot with rice—or wrapped in lettuce for a light, crunchy bite.
Ingredients

1-2 pounds Shrimp

2 tablespoons Cornstarch

1 teaspoon Salt

1 teaspoon Sugar
-
1.5 teaspoons Black Pepper

½ cup Red Onion, Sliced

2 Cloves Garlic, Sliced
-
1-2 Jalapenos, Sliced (optional)

½ cup Cilantro, rinse, dried and torn into 4” lengths

Heat 3” vegetable oil in heavy bottom pan.
Rinse and pat dry shrimp, toss in cornstarch. Shallow fry 1/3 shrimp in oil for 1-2 minutes. Remove to paper towels to drain. Repeat in 2 more batches. Drain oil and cool before discarding.
Mix salt, sugar and pepper together.
Reheat pan on high and add 1-2 teaspoons oil. Add onions, garlic and jalapeno, stir frying quickly.
Return shrimp and toss.
Remove from heat and toss with salt mixture.
Recipe Note
