Crispy, golden squid is lightly fried, then tossed in a sizzling stir-fry of onions, garlic, and jalapeño for that irresistible salt-and-pepper crunch. A classic you’d find at Chinese seafood spots, this version comes together fast and makes any weeknight feel like a celebration.
Ingredients

1-2 pounds Cuttlefish, scored crisscross on one side

2 tablespoons Cornstarch

1 teaspoon Salt

1 teaspoon Sugar
-
1.5 teaspoons Black Pepper

½ cup Red Onion, Sliced

2 Cloves Garlic, Sliced
-
1-2 Jalapenos, Sliced (optional)

½ cup Cilantro, rinse, dried and torn into 4” lengths

DO THIS
Heat 3” vegetable oil in heavy bottom pan.
Rinse and pat dry cuttlefish, toss in cornstarch. Shallow fry 1/3 cuttlefish in oil for 1-2 minutes. Remove to paper towels to drain. Repeat in 2 more batches. Drain oil and cool before discarding.
Mix salt, sugar and pepper together.
Reheat pan on high and add 1-2 teaspoons oil. Add onions, garlic and jalapeno, stir frying quickly.
Return cuttlefish and toss. Remove from heat and toss with salt mixture.

Serve with rice or lettuce for wraps!
