Halibut fillets are rubbed with a fragrant coconut curry spice blend, wrapped in banana leaves, and gently steamed until tender. The result? Ingredients

4, 6-oz Halibut Filets, Rinsed, patted Dry

4 Banana Leaves, Rinsed, Patted Dry

3 tablespoons Coconut Cream Powder

2 tablespoons Madras Curry Powder

1 tablespoon Sea Salt

1 tablespoon Sugar

4 Kaffir Lime Leaves, Finely Sliced (or 2 tablespoons finely chopped lemongrass)

3 tablespoons Fresh Ginger, peeled and thinly sliced into strips

DO THIS
Combine rub ingredients in bowl and mix well.
Toss Hailbut in rub, pressing to coat.
Place one halibut in the center of a banana leaf. Fold left and right sides over halibut. Then fold bottom and top sides to fully enclose halibut in banana leaf. Secure the banana leaf closed with toothpick. Repeat for remaining halibut.
Set a steamer above a pan of boiling water. Place banana packets, toothpick side up, in steamer and steam for 10-12 minutes. NEVER let boiling water touch banana packets.
Recipe Note
Serve packets immediately with steamed Jasmine rice.
