Ingredients

1.5 pound P.E.I. Mussels, washed and scrubbed

2 tablespoons Shiro Miso Paste

1 cup Dry Sake

3 Slices Ginger

½ cup Thai Basil Leaves

1 teaspoon Sugar

1 teaspoon Salt

1 teaspoon Black Pepper

1 tablespoon Unsalted Butter

DO THIS
Heat large wok or skillet on medium high heat. Add butter and when 50% melted, add mussels and ginger. Stir quickly, then pour sake carefully into wok. Cover with a domed lid and let simmer 3 minutes.
Remove lid and add remaining ingredients and stir. Let simmer uncovered another 3-5 minutes. Remove from heat.
Discard any unopened mussels.
Recipe Note
- Serve with thick slices of crusty, artisan bread.
- Add some mung bean vermicelli noodles (aka glass noodles) to the last 3 minutes of cooking to make it a one-dish meal.
